Ingredients

  • Beef or lamb – wash and clean the meat
  • One large potato – chopped
  • One chopped zucchini
  • One chopped carrot
  • One chopped eggplant
  • One pumpkin – optional
  • For the broth, you will need the following ingredients
    • One minced onion
    • One chopped clove of garlic
    • One crushed tomato
    • One chili pepper
    • One tablespoon of tomato paste
    • One bouillon cube
    • One tablespoon of seven spices
    • Bay leaves
    • Cinnamon
    • Dried lime
    • Saudi spice blend
    • Ground cumin
    • Dried coriander
    • One tablespoon of black pepper
  • You will need the following ingredients for Margoog dough
    • One cup of the red flour
    • Some water
    • Salt

Instructions

  1. Fry the onions in a pan by adding some oil and garlic
  2. Next, add meat/beef/lamb, tomato, and Saudi spice blend
  3. Now, add the tomato paste, bouillon, and spices
  4. Continue stirring until you see bubbles
  5. Add water and continue cooking until meat is tender
  6. Add all chopped veggies and whole chili pepper
  7. Once done, make the dough by kneading and rolling it out
  8. Cut the dough into medium pieces
  9. Place them above the veggies to cook
  10. Fry some onions in oil and add salt and pepper
  11. Serve with hot sauce and chili paste
  12. Enjoy the aromatic and flavorful Margoog
