How to Make Maglooba
Maglooba, also called Maqluba, is one of the best Kuwaiti recipes to try at home. It is a delicious, flavorful, and aromatic dish with chicken, veggies, and rice. Here is the procedure to make Maglooba. Read on!
Ingredients
- One large whole chicken or eight pieces – remove the skin
- Seven cups of water
- Two chopped onions
- One tablespoon of chopped garlic
- A half teaspoon of ground cinnamon
- One teaspoon of ground allspice
- One teaspoon of ground turmeric
- Two cups of cooking oil
- One large eggplant
- One or two cups of baby carrots
- Salt and pepper to taste
- Three medium potatoes
- Florets from one small head of cauliflower
- One or two cups of basmati rice
- Water as needed
- Plain yogurt for serving
Instructions
- Add chicken, water, garlic, onion, turmeric, allspice, cinnamon, salt, and pepper to a large pot and bring to a boil
- Reduce the heat to low-medium and simmer for 20-25 minutes
- Remove the chicken from the broth and set aside
- Heat oil in a large skillet while the broth continues to simmer
- Fry eggplant slices in oil until brown
- Remove the eggplant slices to a plate lined with a paper towel
- Use the same procedure for frying potatoes, cauliflower, and carrots
- Use a large pot to layer potatoes on the bottom
- Now arrange chicken over the potatoes
- Next, arrange carrots, eggplant, and cauliflower on top of the chicken
- Pour uncooked vegetables and rice over chicken
- Shake the pot to settle the rice
- Add the broth to the rice, chicken, and vegetable mixture
- Add some water if needed
- Cover the pot and simmer over low-medium heat to ensure the rice softens
- Remove the lid from the pot and transfer it to the large platter
- Flip the pot to place the dish upside down on the platter
- Serve the dish to your family and friends with yogurt
